Given the direction of many ISPs it would be quite useful to have a category that identifies domains that provide content that requires high bandwidth and could cause users to exceed their monthly usage caps. Personally, I would block the category and whitelist the sites I needed.

`video sharing` category is already there
and most important "file storage" category (like rapidshare)will fulfill your requirement without adding any more categories

A streaming media category would be great for me. I get a lot of flack for blocking anything to do with TV, Movies, or Radio just in order to block people from streaming media from those sites and eating up my bandwidth. I really don't care if they go to imdb.com or the like, I'm just interested in blocking the bandwidth wasters. I am very much in favor of a separate category for Streaming/High Bandwidth.

Traffic shaping is a much more appropriate tool for this.
I like the "Streaming" category, so we can block those site that provide that content.
This would be ideal for a small business Citrix platform we use...users use web browsing within Citrix and we get limited bandwidth (go over, we pay a lot) so this would allow us to restrict bandwidth when needed.
This category should be added if you have ISPs like Comcast that put a bandwidth cap on your connection and will cut you off if you exceed that cap. That would be great for networks that doesn't want network congestion.
The "High" setting on the Content Filtering settings page will accomplish this. You can also choose to block specific categories with the Custom option.
